heres something I would love to see in PS, when you select an instrument, have different guitar parts you can choose from
Lead guitar Rythem Guitar Mixed Guitar
the mixed is what I normally chart, but it would be cool to be able to chart a lead only, then a rythem only, and then the mixed which combines the best parts of both.

Yeah, I kinda miss the old GH days when the second player could be bass or rhythm.
If we got vox at some point, I think it'd be fun to play songs from bands like Metallica, 'cause you could play vox and rhythm at the same time.

I think its a great idea but would indeed be low priority. If it were me though I would just chart those different guitar parts on the different difficulties for guitar. Does anyone really play charts lower than expert. This would give you the option of 4 unique guitar parts. Just because it says easy shouldnt mean that it has to be. I always overchart a song for drums to make it fun and put that on expert then I chart the original performance and put it on hard. Just my preference but a very available way to get around it currently.

FoF style MIDIs already have separate tracks for mixed guitar (PART GUITAR), lead guitar (PART GUITAR COOP) and rhythm guitar (PART RHYTHM). For the most part, I don't think people chart for all of these tracks. Personally, I usually don't either, but when I get more into pro guitar charting, I'll want to make 4 difficulties each for lead, rhythm and mixed guitar when I feel motivated to do so.
